Hospitality & Tourism
Developing a hospitality or destination concept from the segment up — demand, positioning and the operating model — alongside practical resource and waste reduction across dispersed operations.
Request support for HospitalityDeveloping in Hospitality
A hospitality or tourism proposition is decided long before the build: who the guest or visitor is, what the concept is built to deliver to them, whether the demand is real and reachable given seasonality and channel mix, and whether the operating model holds together once occupancy, staffing and working capital are tested against each other. A concept that reads well but cannot carry its own cost structure is one of the recurring risks we look for early, before it is expensive to correct.
We develop the concept from that position — the guest segment and experience first, then the demand and positioning appraisal against what is already available nearby, then the operating model and the local supply the development depends on. The sections below set out the surrounding support and the operational picture across properties.
Sector context
Hospitality and tourism operations are typically distributed across sites, and consumption is driven by occupancy and season rather than by a predictable production schedule. That makes both measurement and intervention harder than in a single-site manufacturing environment.
Guest-facing commitments are also common in the sector, and the gap between a public commitment and the evidence behind it is where reputational risk concentrates.
Decisions we help clarify
How do we measure across sites?
Establishing a consistent view of energy, water, waste and procurement across properties with differing systems and reporting maturity.
What reduces waste most effectively?
Prioritising interventions — procurement, single-use reduction, food waste, linen and utilities — by their practical effect rather than their visibility.
Can our commitments be evidenced?
Testing whether the data behind public sustainability commitments is sufficient to support them.
How should performance be reported?
Setting out performance in a way that is honest about coverage, assumptions and the limits of the underlying data.
What is the concept, and who is it for?
The proposition, the guest or visitor segment it targets and the experience it is built to deliver — settled before any single asset is fixed.
Is the demand real and is the operating model viable?
Whether demand is reachable given seasonality and channel mix, and whether occupancy, cost structure and working capital hold together when tested against each other.
