A food or beverage proposition has to clear two hurdles before anything else matters: someone has to want to buy it at a price that works, and it has to be producible at the specification and volume the market case assumes. Those two are often assessed separately, and the gap between them is a recurring source of risk — a demand case built on a product the existing line cannot make, or a process investment justified against volume that the market will not take.
